No-Bake Gingerbread Energy Bites
With only six simple ingredients, this holiday treat is a delicious, quick, and easy-to-make snack or dessert.

Go nuts
Easily substitute walnuts for cashews or hazelnuts, or use sunflower seeds to make these bites nut free.
Ingredients
- 1 cup (250 mL) walnuts
- 1 cup (250 mL) rolled oats
- 1 cup (250 mL) whole soft dates, about 10-12
- 1 Tbsp (15 mL) blackstrap molasses
- 1 tsp (5 mL) cinnamon
- 3/4 tsp (3 mL) ground ginger
Directions
- Add all ingredients to food processor and blend until well combined. If mixture sticks to edges, scrape down with rubber spatula between blending.
- Roll 2 Tbsp (30 mL) mixture into balls with your hands. Place balls onto parchment paper-lined plate and place in fridge for at least 15 minutes before serving.
- Store in fridge for up to two weeks.
