Meghan Markle’s - Rosemary Focaccia Bread

Love her or not, Meghan Markle has been getting a lot of attention lately with her new Netflix series. And as it turns out, her recipe for Rosemary Focaccia bread looked amazing, so we thought we'd try it - and it didn't disappoint. Try it for yourself!
Ingredients
- 2 cups bread flour or all-purpose flour
- 1 teaspoon kosher salt
- 1 tablespoon olive oil (plus extra for greasing the pan and drizzling on top)
- 1 teaspoon instant yeast
- 1 cup warm water
- 1–3 sprigs of fresh rosemary, leaves only
- Flaky sea salt, to taste
Instructions
- In a large bowl, whisk together the warm water, instant yeast, flour, and 1 tablespoon of olive oil until a shaggy dough forms.
- Add the kosher salt and mix until the dough is fully combined. It will be sticky—that’s okay!
- Lightly coat the surface of the dough with olive oil and cover the bowl with a clean kitchen towel.
- Let the dough rise in a warm place for about 2 hours, or until it has doubled in size.
- Preheat your oven to 425°F (220°C).
- Once the dough has risen, transfer it to a well-oiled cast iron braiser or baking dish.
- Gently stretch the dough to fill the pan. Don’t rush this step—it may take a few stretches and rests to get it there without tearing.
- Cover the pan with a towel or plastic wrap and let the dough rise again for 30 minutes.
- When it’s ready, lightly oil your hands and use your fingers to press dimples across the top of the dough.
- Drizzle generously with olive oil, then sprinkle with rosemary leaves and flaky sea salt.
- Bake for 20–25 minutes, or until the focaccia is puffed up and golden brown on top.
- Remove from the oven and carefully lift it out of the pan to cool slightly.
- Slice and serve warm. It’s perfect on its own or dipped in olive oil—or your favorite spread!
