Tart hibiscus pairs beautifully with citrus and sparkling water, while chamomile and passionflower create a smooth, balanced flavour that feels both uplifting and relaxing. It’s a refreshing drink to enjoy on the patio, at the beach, or anytime you want something a little more special than your usual iced tea.

  1. Add the dried hibiscus flowers, chamomile, and passionflower to a 1 L mason jar. Fill with filtered water and seal tightly with the lid.
  2. Place the jar outside in direct sunlight for 2–5 hours, adjusting with the sun if needed.
  3. Once steeped, strain the tea and refrigerate until chilled if desired.
  4. Stir in the grapefruit juice and optional sweetener.
  5. Pour over ice and top with a splash of soda water.
  6. Garnish with mint or edible flowers if desired.

Sip, stay cool, and enjoy! Store any leftover sun tea in the fridge for up to two days.
