Healthy Greek Ground Chicken Bowls
Fresh, colourful, and packed with protein, these Healthy Greek Ground Chicken Bowls are a simple meal that's perfect for busy weeknights or meal prep. Seasoned ground chicken is paired with a bright Greek salsa, creamy tzatziki, and your choice of rice or cauliflower rice for a satisfying bowl full of Mediterranean-inspired flavour.

Ingredients
For the Greek Salsa:
- ½ cucumber, diced
- ¼ red onion, diced
- ¼ cup kalamata olives, sliced
- Salt and pepper to taste
- Juice of ½ lemon
- 2 tsp fresh dill, chopped
- 1 tbsp fresh parsley, chopped
For the Tzatziki:
- 1 cup plain yogurt (coconut yogurt works well for a dairy-free option)
- 3 tbsp cucumber, finely diced
- 2 tsp fresh dill
- 1 tsp garlic powder
- Pinch of salt
- Juice of ¼ lemon
For the Chicken:
- 2 tsp olive oil
- 1 lb ground chicken
- 2 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- 1 tsp dried dill
- 1 tbsp fresh parsley
- Juice of ½ lemon
- Salt and pepper to taste
For Serving: Cooked rice or cauliflower rice
Directions:
- In a medium bowl, combine all of the Greek salsa ingredients. Toss well and place in the refrigerator while you prepare the remaining ingredients.
- In a separate bowl, mix together the yogurt, cucumber, dill, garlic powder, salt, and lemon juice. Stir until well combined and refrigerate until ready to serve.
- Heat the olive oil in a large skillet over medium heat. Add the ground chicken and cook until browned, breaking it into small pieces as it cooks.
- Add the garlic powder, onion powder, oregano, dill, parsley, lemon juice, salt, and pepper. Stir well and continue cooking for 1–2 minutes until the chicken is evenly coated with the seasonings.
- Divide the rice or cauliflower rice between four bowls. Top with the seasoned chicken, Greek salsa, and a generous spoonful of tzatziki.
- Serve immediately and enjoy!
Serving Tip: These bowls are excellent for meal prep. Store the chicken, salsa, tzatziki, and rice separately and assemble when ready to eat for the freshest flavour and texture.
