Daina's Spinach Brownies
Sneaky veggies never tasted so good! You won’t believe these decadent brownies are hiding both spinach and carrots, making them a surprisingly healthy treat.

Yields: 12 brownies
Ingredients:
- Nonstick cooking spray
- 3 ounces semisweet or bittersweet chocolate
- ½ cup carrot puree
- ½ cup spinach puree
- ½ cup packed light or dark brown sugar
- ¼ cup unsweetened cocoa powder
- ¼ cup hemp hearts
- 2 tablespoons butter
- 2 teaspoons vanilla extract
- 2 large eggs
- ¾ cup oat flour or all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon salt
Instructions:
Preheat your oven to 350°F. Lightly coat an 8x8-inch baking pan with nonstick cooking spray.
In a double boiler or microwave, melt the chocolate, stirring occasionally until smooth.
In a large mixing bowl, combine the melted chocolate, carrot puree, spinach puree, brown sugar, cocoa powder, hemp hearts, butter, and vanilla extract. Whisk until the mixture is smooth and creamy, about 1 to 2 minutes.
Whisk in the eggs. Add the flour, baking powder, and salt, and stir with a wooden spoon until just combined.
Pour the batter into the prepared pan and bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out mostly clean. Let the brownies cool completely in the pan before cutting into 12 squares.
