Daina's Quinoa Salad
Daina’s back in the kitchen and has whipped up a simple, fresh, colourful and DELICIOUS quinoa salad!

You’ll need:
  • 2 cups cooked quinoa
  • 1 cup tomatoes, halved
  • ½ cup cucumber, diced
  • ½ cup black olives, pitted and chopped,
  • ½ red bell pepper, diced
  • ¼ cup feta cheese, crumbled (optional)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp red onion, chopped
  • ½ tsp sea salt
  • Pinch fresh ground black pepper
  • 1 tsp dried oregano
  • Juice of ¼ lemon
Add all ingredients to a bowl, and mix well.

Serve and enjoy!
